Vegan Mofo 2015 #26: Snowed In

Today’s Mofo prompt is It’s cold and rainy and there’s a snow drift outside your door! What are you going to make using the ingredients you have? Welllll I’ll just pretend I’m snowed in, and that Melbourne doesn’t really look like this today:

I want to get this Mofo post up and I haven’t cooked dinner yet, but my snowed in food will be a can of black beans and a can of kidney beans turned in to a Mexican style stew with all the veggies I have here (loads of them too), some lime, fresh coriander (cilantro) and tortilla chips. It will look something like this:

If I was going to be snowed in somewhere, that’s what I’d make! I always have emergency cans of beans and diced tomatoes and sweet potato is always hanging around.

  1. This prompt is a bit of a stretch for the southern hemi’s 🙂 That little polar bear/dog’s face made my inside voice go ‘Aaaaaaaa!’ so cute! I actually thought it was snow/sleeting yesterday so I’d tuck into your mexi-chilli easy right now.

Sounds good to me – tonight we had a snowed in scenario that actually was trying to use up what was in the kitchen before we go on holidays and it was tofu, veg in stirfry and rice – most vegies used! though if we were snowed in we would actually be trying to eek out our vegies rather than use them up!

    • I’ve probably got cans of creamed corn at the back of the pantry somewhere (I don’t like it much which explains why I always seem to find cans whenever I do a clean!)

  3. Chilli is definitely a good response to this prompt. I usually have the stuff to make it in the pantry and live somewhere that has a definite chance of getting snowed in this winter so this could become a reality!
